My two little guys sure do love pancakes, but have you looked at the ingredient list on most pancakes/waffles you find in the store? They are loaded with processed white flour and inflammation promoting vegetable oils. A couple of months ago I was perusing my local REI and came across a package of FlapJacked Pancakes. I liked the ingredient list and the fact that they were non GMO, high in protein and had a decent amount of fiber.
